Ingredients:
- 1 bag of Knorr Spanish Rice
- 2 tbls of olive oil
- 1lb chicken breast, cubed
- 1 tbls taco seasoning
- 1 can black beans, rinsed and drained
- 1 small can diced chilies
- 1 can of corn rinsed and drained
- 1/3 cup of salsa
- Mexican style cheese
- Avocado and tomato for toppings
Instructions: - Heat oil in large pan
- Cook rice in pot according to bag instructions
- Add chicken and taco seasoning to pan with hot oil, cook through
- Add black beans, chilies, corn, and salsa to pan with chicken
- Once rice is cooked, add to pan
- Stir and heat for three minutes
- Add in as much cheese as you would like
- Serve in a bowl and top with avocado and tomatoes (and whatever other toppings you would like)
