Ingredients:
- 1 lb chicken breast
- 1 tbls olive oil
- 1 teaspoon of the following seasonings: garlic powder, onion powder, salt, pepper
- 5-6 potatoes of your choice (I used red potatoes)
- Half cup of milk
- 2 tbls butter, melted
- Chicken gravy
Instructions:
- Cut chicken breasts in half, length-wise (this helps the chicken cook faster)
- Season chicken with all seasonings, let sit for a few minutes
- Peel potatoes and chop into bit sized pieces
- Add potatoes into instant pot and cover with water
- Pressure cook for 10 minutes and quick release
- Heat olive oil in pan and add chicken breast
- Cook for 5-6 minutes on each side until cooked through
- Once potatoes are done, drain water
- Use mixer or masher until somewhat mashed
- Add in melted butter and mix well
- Add in milk, and mix until creamy, salt and pepper to taste.
- Warm chicken gravy (I used a jar of store bought gravy, you can use whatever type of gravy you wish)
- Serve immediately
