Christmas Eve dinner was not extravagant at all. I made a frozen lasagna, garlic bread, and salad.
For Christmas Dinner, I made ham, Boursin mashed potatoes, broccoli, and mixed berry cobbler dump cake for dessert.
Put a trivet in bottom of instant pot and add in 1 cup of water. I used my 6.5 quart instant pot for the ham.
Place ham in a makeshift foil “bowl” in the instant pot on a trivet.
Mix about a 1/4 cup pineapple juice and 1 tbls brown sugar in a small bowl. It should be thick. Spread in between slices (if using a spiral sliced ham) or spread over the top of the ham.
Pressure cook for 5 minutes and let it naturally release.
Peel the potatoes and chop into chunks.
Place potatoes into instant pot and cover half way with water. I used my 3 quart instant pot for the potatoes.
Pressure cook for 8 minutes and quick release.
Use a mixer or potato masher until no longer clumpy. Cut Boursin cheese into smaller chunks so that it will melt faster. Add into the potatoes and mix until cheese is incorporated. (If you like richer potatoes, add in half cup of melted butter. For creamy potatoes, add in half cup of milk. I did end up adding in milk and butter.)
Broccoli, I just cut up into bite sized pieces and boiled it on the stove top until the desired firmness.
Mixed berry cobbler dump cake. I found the recipe here. I had to half this since I cannot fit a 9 by 13 pan in my camper oven. If we like it, I will make a second one later on. If not, I will find another dump cake recipe and half that! (FYI, this dessert was AMAZING!!!!)
The Dinner:
- Ham quarter $20.45
- Pineapple juice mix for “sauce” I already had the can of pineapples on hand, I’m guessing $1.50
- Cheesy Potatoes $5.99 for a 3lb bag of potatoes
- Cheese for cheesy potatoes, I used Boursin, but you can use whatever you prefer $6.99
- Broccoli $2.57 for 1lb
Mixed Berry Cobbler Dessert:
- Frozen Mixed Berries $5.49
- Oats $3.29 (but only used 1/2 cup)
- Brown Sugar $2.19 (only used 1 tbls)
- French Vanilla Cake mix $3.49 (only used half)
- Ice Cream for topping $5.49
So the total comes to $57.45, but a lot of the stuff I got can be used for other meals and we had leftovers. If I were to total this all up three years ago it would probably be under $40, but its 2023 and well, you know.
