Ingredients:
- 2 Italian style chicken sausage links, diced
- 1 small yellow onion, diced
- 1 tbsp olive oil
- 1/2 cup of artichoke hearts (in marinade), quarters cut in half
- 1 tbsp of the marinade from the jar of artichoke hearts
- 1/4 cup sun-dried tomatoes
- 1/4 cup of white wine or cooking wine
- 1 can of cannellini beans, drained and rinsed.
- 1 cup chicken broth
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped parsley, optional
- 1/4 cup feta cheese, crumbled
Instructions:
- Heat olive oil in pan
- Add in sausage into pan to get a nice sear, then add in the onion. Cook until onion is soft.
- Add in sun-dried tomatoes, artichoke hearts and marinade, mix together.
- Pour in wine to deglaze your pan, then let reduce.
- Add in beans and chicken broth, cook about 10 minutes.
- Mashed the beans with a fork to make the dish creamy.
- Add in the red pepper flakes and parsley (optional) and stir.
- Remove from heat and add in the feta cheese.
- Serve with bread or salad or both on the side.
I made this recipe knowing that I did not like sun-dried tomatoes, but this recipe was YUMMY! I’m not sure if it was just the brand I bought before that I didn’t like, but I didn’t mind them in this recipe. I did not add parsley since I didn’t have any on hand. The Italian sausage comes in a 4 pack, so you can easily double this recipe to use all the sausage or freeze the other 2 for another meal. The place I found this recipe suggested that you serve it with some crusty bread, but I served mine with a salad.
